Consider any given experiment: you make a prediction based on a theory as to how things will work, then either they work that way or they don't. If they work that way, you have reinforced the theory, but you haven't proven it. If they don't, then you have disproved the theory.

Question #1: Why is Gravity only a theory? How is it not a Law?
No one knows. It is incompatible with the other 3 other forces (electromagnetism, strong and weak forces), and with the general quantum mechanics theory. these three are mediated by elemetary particles (photons, gluons, and some bosons). People invented gravitons (hypothetical particles that carry information about gravity) but the thing is that gravitation is felt instantaneously, even if a body is millions of light years away. People struggle to find the Theory of everything which will explain all four forces with just one equation, but then weird-ass theories like Godels incompletness theorem say that such TOE is conceptually impossible.

For time being its safer to think
that Gravitation is due to the workings of invisible pixies and not to bother any further about shit noone cares about for all practical matters.

Is that true? I was under the impression that it had never been proved one way or the other, but that most hypothesized gravity travelled at the speed of light (same as the other forces).

I think I have access to Springer. Maybe I'll try to track down the actual paper.

Yes you're right, since the graviton is merely hypothetical, the speed at which the force information transmits is merely hypothetical also. You're much better at
this than with metallurgy.

Basically, no one understands gravitation, same as with quantum mechanics. We just know it exists.
