If about anime we are talking about wapanese stuff, then I liked Captain Harlock, more specifically the engineer.

The first scene starts with Harlock on the bridge, then the aerospace engineer comes up and says "Hey man, I built you this spaceship with my bare hands, and we are just standing underground just below the corrupt invaders headquarters, but lets just break free and explore space while upholding freedom and fighting the morally corrupt invaders", then Harlock says "OK Then"

I watched this when I was like 6 and it inspired me to get a degree in Aerospace Engineering. It was not until later that I found out there is no way for you to build a spaceship with your bare hands (at least yet) an I was like
